Using OpenAPI 3, it is possible to document the XML schemas in the same manner as their JSON equivalent : https://swagger.io/docs/specification/data-models/representing-xml/

WPS-1/2 route should be documented as such.

Also, if we support the Accept header #125 to return XML, these response bodies should be added to the OpenAPI spec.
