Date time does use a default value and normalize it to device time as expected.
I believe dates should be able to use both dateTime and date values as defaults. This could be a JavaRosa issue. We should also check dynamic defaults (XLForm trigger column / XForms setvalue action). Dynamic defaults are more likely in an Entities context.
