I'd like a feature where I can e.g. add a hashtag like #NoBridge to post posts exclusively on one platform and not bridge them.

Also a feature to pin a post on the other platform? Either by adding a hashatg like #PinOnBluesky or by replying to the post with a PM to the bridgy account with the text "pin".

Yes! Good ideas, these are tracked in #831 and #1374.
