I don't know AKS, so I am not sure, but I think AKS YYYY-MM-DD releases (https://github.com/Azure/AKS/releases) are valid for multiple Kubernetes versions. This is difficult to know which AKS versions contains which Kubernetes versions so I choose for the time being not add latest versions in the release data and stick to https://learn.microsoft.com/en-us/azure/aks/supported-kubernetes-versions?tabs=azure-cli#aks-kubernetes-release-calendar.

But, even with this simplification, Information on https://learn.microsoft.com/azure/aks/supported-kubernetes-versions is vague, and information about Kubernetes in release notes is unreliable (see all the comments in the release). So I am not sure anything can be automated.

@captn3m0 do you think there is enough information on https://deploy-preview-2161--endoflife-date.netlify.app/azure-kubernetes-service ?

Made a few small changes. Looks good enough for a first version to me.

Tracking services is always hard (We have similar issues with GKE/EKS as well), but this is definitely helpful.
