Do not hardcode the pkg-config command to support compiling on cross where e.g. the pkg-config command may be prefixed by the host triplet x86_64-pc-linux-gnu-pkg-config. See also https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=884798
