Improved Azure OpenAI support for embedding and chat LLM

Description

Embedchain package was not working with Azure OpenAI due to changes in underlying langchain modules. api_version argument was missing in the embedder. Added support for custom embedding dimension length (for example for text-embedding-3-large).
